10 summer cocktail recipes

A summer party needs fabulous cocktails. From fruity treats like watermelon tequila and a coconut mango mojito, to tangy cocktails like a grapefruit vodka and sweet delights like a classic Pina colada, our round-up has drinks to suit all tastes.

Watermelon-Tequila Cocktail 

Ingredients- Serves Eight

60ml water

85g granulated sugar

455g diced, seedless watermelon

60ml fresh lime juice

3 limes (juice only), optional

170g fresh mint leaves, plus 8 sprigs for garnish

300ml silver tequila



  1. In a small saucepan, bring the water and sugar to a simmer. Stir until the sugar is dissolved (about 1 minute), then let the sugar syrup cool.
  2. In a blender, purée the watermelon until smooth. Strain the watermelon juice, pressing gently on the pulp to extract as much juice as possible. Discard the pulp.
  3. In a pitcher, combine the sugar syrup with the lime juice and mint leaves. Using a wooden spoon, lightly break up the mint. Add the watermelon juice and tequila. Add ice to the cocktail and garnish with the mint sprigs and serve cold.

Coconut Mango Mojitos

Ingredients- Serves One

6-8 fresh mint leaves

74ml of mint syrup

30ml of coconut rum

45ml of club soda

60ml mango purée

The juice of 1 lime


  1. To make the mango purée, combine 1 peeled, chopped, ripe mango in a food processor (or high speed blender) with the juice of 1 lime, and process until smooth (or at least almost smooth).
  2. In the bottom of a glass, add 30ml of simple syrup and the mint leaves. Gently break up the mint with a wooden spoon. Add ice to the glass, and pour rum, syrup, mango purée, lime juice and club soda over top. Mix with a long spoon or knife and serve with an additional sprig of mint.

Cucumber Lemonade

Ingredients- Serves Two

90ml fresh lemon juice 
90ml fresh cucumber juice 
60ml gin
60ml sugar syrup 
Club soda 


In a tall glass, combine the lemon juice, cucumber juice, gin, and sugar syrup. Stir. Add the ice and top off with club soda. Add more syrup if more sweetness is desired. Garnish with lemon and cucumber slices. 

White Sangria

Ingredients- Serves six to eight

120ml (1 to 2 oranges) freshly squeezed orange juice

120ml (3 to 4 lemons) freshly squeezed lemon juice

60ml Triple Sec

170g sugar (add more if desired)

1 bottle (750 ml) dry white wine (Chardonnay, Pinot Grigio, etc...)

1 bottle (295ml) sparkling water

1 orange, sliced

1 lemon, sliced


In a large pitcher, combine orange juice, lemon juice, triple sec and sugar; stir until well combined. Add the bottle of wine and soda water; stir well. Garnish with orange slices and lemon slices. Serve.


Ingredients- Serves One

Ice cubes

60ml vodka

120ml freshly squeezed grapefruit juice (from about 2 medium grapefruits)

1tsp sugar syrup (optional)


Simply add all ingredients in a cocktail shaker and mix well. Serve with a slice of grape fruit.

Italian Sunset

Ingredients- Serves One

60ml amaretto

90ml pulp-free orange juice

90ml club soda

Dash grenadine


  1. Fill a tall glass with crushed ice.
  2. Add amaretto.
  3. Carefully pour in the orange juice, and then the club soda into the glass in layers. Finish with a dash of grenadine. Do not stir.

Mint Julep

Ingredients- Serves One

10 mint leaves, plus a sprig for garnish

1 1/2tsp caster sugar

Soda water

Crushed ice

74ml bourbon whiskey


  1. Place the mint leaves in the bottom of an old-fashioned glass and top with the sugar. Gently break up the mint leaves with the sugar.  
  2. Add a splash of soda water, fill the glass 3/4 full with crushed ice, and add the bourbon. Top with another splash of soda, stir, and garnish with a sprig of mint. Serve immediately.

Easy Michelada

Ingredients- Serves One

1 bottle of lager

60ml tomato juice

3-4 splashes hot sauce, more or less to taste.

2 splashes of Worcestershire sauce

2 splashes of soy sauce

Juice of 1 lime

Salt for the rim


  1. Take about a tablespoon of salt and sprinkle it on a small plate. Rub a slice of lime around the rim of the glass and then press the rim in the salt.
  2. Fill the glass with the tomato juice. Add the hot sauce, the lime juice, the Worcestershire sauce, and the soy sauce. Fill the rest with cold beer. Garnish with a slice of lime.

Pina Colada

Ingredients- Serves Two

190g ice

64g diced pineapple, frozen

60ml pineapple juice

60ml coconut cream

45ml white rum

30ml dark rum

Pineapple slices


Put the ice, frozen pineapple, juice, coconut cream, and the white and dark rums into a blender. Blend until smooth and frosty. Pour the drink into 2 glasses and garnish the rim with pineapple slices.

Blackberry Mojito

Ingredients- Serves Two

8 fresh mint leaves, plus more for garnish

64g fresh blackberries

1tbsp light agave syrup

Ice cubes

120ml light rum

60ml fresh lime juice

Crushed ice

Lime-flavored soft drink

Lime slices, for garnish


  1. In a small bowl, gently break up the blackberries. Set aside.
  2. Place mint leaves in bottom of glasses. Divide and spoon blackberry mixture on top.
  3. Add rum, sugar, and lime juice and stir to combine. Top with crushed ice.
  4. Add club soda and garnish with mint leaves and more blackberries.
